Chitin is a polysaccaride, being the second most abundant polymer on earth following cellulose. It is found in the outer sceletons of crustancea and insects, as well as the internal structure of invertebrates.
Commercial Chitin is mainly produced from shells of crabs and shrimp, by the removal of proteins and the dissolution of calcium carbonate.
